Over time, gear oil breaks down. Heat cycles degrade the base oil and its additives. Metal particles from normal gear wear accumulate in the fluid. In wet environments, moisture can work its way in. Shop rates for differential fluid changes vary by region, vehicle type, and number of differentials involved. A single rear differential service on a common truck tends to cost less than servicing all three lubricated drivetrain units on a 4WD vehicle.
